Move over pumpkin spice – pineapple spice is moving in. Not wanting to let go of summer, and my love for pineapple, I thought I’d make up a fun recipe to pull it into fall with my favorite flavors from both seasons! Using SOBIESKI® 100% Pure Rye Vodka, DOLE® Canned 100% Pineapple Juice, cream of coconut and the surprise additions of GRILLED pineapple and fresh nutmeg, this drink is everything you love about summer and fall combined into one delicious treat!

It tastes even better than it looks! Let’s start with the basics -SOBIESKI® 100% Pure Rye Vodka (the #1 Rye vodka in The US who also received a double gold medal at the 2016 San Francisco World Spirits Competition) and DOLE® Canned 100% Pineapple Juice. These are staples in many awesome drinks and completely inspired the creation of the “Pineapple Spice”.

Add in some fresh pineapple (every drink needs a cute garnish), nutmeg and some cream of coconut and you have all you need to make your own.

To make you’ll want to prepare your pineapple. First, heat up your grill on high. Then slice the pineapple into large wheels.

Once the grill is nice and hot, add the pineapple slices.

Keep an eye on them and flip after a few minutes (time will depend on how hot your grill is). You just want it to heat up a bit and get some nice grill marks on the outside. Grilling the pineapple gives a subtle smokey flavor and just gives a little bit of a deeper flavor.

Set them out to cool.

When you’re ready to serve, cut some of the grilled pineapple into cubes and cut others into triangles for a garnish. Place a couple cubes of pineapple in the bottom of a tall glass. Muddle as much or as little as you’d like.

Fill the glass with ice.

Next comes the SOBIESKI® 100% Pure Rye Vodka, you’ll need 1 1/2 oz. Then add 1oz cream of coconut.

Then you’ll top with DOLE® Canned 100% Pineapple Juice (3-4oz). Stir to combine.

Grate some (or a lot if you’re like me) fresh nutmeg on the top. Already ground nutmeg will work too, but the flavor of fresh ground nutmeg is so much better and more complex! You can try mixing in some other spices like cinnamon as well!

Garnish with a slice of the grilled pineapple.
