I haven’t written much about it here but I’ve switched to a Paleo diet/lifestyle for the last couple of months (since my auto immune flare up) and I’ve never felt better. I absolutely LOVE eating this way and my body is loving it too (more on that later).
I thought I’d share my favorite “go to” banana muffin recipe. I love this one for a couple of reasons – I almost never have 3 ripe bananas and SO many recipes want 3 (this one calls for 2) and it’s really easy to customize – adapted from So…Let’s Hang Out
- 1 cup almond meal
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp coconut oil melted
- 3 eggs
- 1/4 cup maple syrup
- 2 tsp vanilla
- 2 mashed ripe bananas
- 1/4 cup dairy free dark chocolate chips

My husband likes omitting the vanilla and using 2tbsp of rum instead. We’ve also used blueberries or nuts in place of the chocolate chips.
If you have a heavy duty blender you can grind your own almonds to make the almond meal. We have a Blendtec and I grind no more than a cup of whole almonds (we get the big bag at Costco) on the Ice crush setting for about 25 seconds – you don’t want to go too long or you’ll end up with butter and if you put more than a cup in you’ll get a lot of chunks.
