We are lucky enough to have an entire gluten free table at our Easter pot luck for church on Sunday. We usually bring a dessert (cupcakes) and a main dish. Still not sure of the main dish – thinking gluten free mac and cheese or hashbrown casserole. The cupcakes will either be this recipe for carrot cake turned into cupcakes

 or what I made last year – Gluten free coconut cupcakes with lemon curd filling

Can’t go wrong with recipes from keep it simple, keep it fresh!
