5 Cheese Gluten Free Mac & Cheese

A delicious meal or side dish perfect for the holidays.
Ingredients
  • 4 c Gluten-Free Macaroni
  • 1 lb Bacon
  • 8 Tbsp Butter Divided
  • 1 Large Onion sliced and cut in thirds (or really however you want to slice it)
  • 1 Tbsp Bacon Grease
  • ¼ c Gluten Free Flour Blend
  • 2 c Whole Milk
  • ½ c Half-and-half
  • 2 whole Egg Yolks, Beaten
  • Salt And Pepper, to taste
  • ½ cup Grated Gruyere Cheese
  • ½ cup Grated Fontina Cheese
  • ½ cup Grated Parmigiano Reggiano Cheese
  • ½ cup Grated Sharp Cheddar Cheese
  • 4 ounces (weight) Chèvre or Goat Cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Cook macaroni for half of the instructed time (for example mine said to cook for 7 minutes but I boiled it for 4). Drain and set aside.
  3. Fry bacon and drain on a paper towel. Reserve a tbsp of the grease.
  4. Melt 4 tablespoons butter in a skillet and sauce onions over medium-low heat for 10 to 12 minutes, or until golden brown and soft. The onions will shrink quite a bit so if it looks like a lot, don't worry!
  5. In a separate pot, melt 4 more tablespoons of butter and 1 tablespoon of the reserved bacon grease. Sprinkle in gluten free flour and whisk to combine.
  6. Cook, stirring constantly, over medium heat for 1 minute.
  7. Pour in milk and half & half, then cook for 3 to 5 minutes or until thick. Reduce heat to low. Add salt & pepper to taste. I almost always need more salt than I think.
  8. Temper the egg yolks by pouring ¼ cup of the hot milk mixture into the bowl with the egg yolks.
  9. Pour egg mixture into sauce and cook for another minute.
  10. Add all the cheeses and stir until melted.
  11. Add onions and bacon and stir.
  12. Add cooked macaroni and stir to coat.
  13. Pour into a baking dish and bake for 15 to 20 minutes or until sizzling and hot.
  14. If it's sizzling but not browning you can broil it for a few minutes to crisp up the top.
