Simple Gluten Free Pumpkin Bars

These simple pumpkin bars are not fancy but delicious and fill that craving for a pumpkin or fall flavored treat!
  • ½ c canned pumpkin
  • ½ c honey
  • 2 large eggs
  • 90g (a little over ½ cup) of white rice flour or flour of choice
  • ¼ tsp salt
  • ½ tsp baking soda
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • ⅛ tsp cloves
  1. Preheat oven to 350F
  2. Whisk together pumpkin, honey and eggs.
  3. Add in flour and spices.
  4. Mix well
  5. Pour into greased 8"x8" baking pan
  6. Bake for 25-30 min or until no longer "jiggly" in the middle
  7. Top with whipped cream
