Gluten Free Grain Free Chewy Almond Butter Cookies

Simple, chewy flourless cookies! Add chocolate chips or cocoa powder to change up the flavor a bit.
  • 1 cup almond butter (I like Jason's Maple Almond Butter for this recipe)
  • ¾ cup coconut sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp vanilla
  • pinch of salt
  1. Preheat oven to 350F
  2. Mix all ingredients well.
  3. Roll 1 - 2 TBSP of dough into a ball and place on parchment lined baking sheet.
  4. Flatten balls a bit and make sure they are spaced well.
  5. Bake for 10 minutes.
  6. Allow to cool completely before touching.
