As part of a sponsored post for Collective Bias® I made this easy Broiled Yogurt Chicken and Chicken Tikka Masala using First Street Chicken Leg Quarters, value pack from Smart & Final.

We recently shopped at Smart & Final and realized they had some amazing prices on food we usually buy. We stocked up on some necessities for one of our dinner staples and thought we’d share it with you. (I say “we” but really my husband is the chef in our house). The main ingredient for Easy Broiled Yogurt Chicken is, of course, chicken. Smart & Final has these great value packs of chicken quarters so that’s what we picked up!

 For the Broiled Yogurt chicken set your oven on high broil to start heating up. First you’ll need to skin the quarters which is pretty easy once you get going.

Next combine 1 TB each of cumin, coriander and paprika, 2 tsp of salt and 1 tsp black pepper. Distribute over both sides of the chicken.

Next you’re going to generously apply yogurt to both sides of the chicken. You can use regular plain yogurt or greek plain yogurt. We used about 12-16 oz.

Then place the chicken on a broiler pan (make cleanup easy by lining the bottom pan with foil – we were out)

Place the chicken in the oven you’ve been heating on high broil about 12 inches from the top (2nd rack) for 7-9 minutes, flip and broil for another 7-9 minutes until done and center reaches 165F

This chicken is fabulous just like this – it comes out moist and delicious (I’ve been known to sneak a few bites before it gets to the table) You can serve it up with your favorite sides

Easy Broiled Yogurt Chicken

  • 4 chicken leg quarters
  • 1 tbsp Cumin
  • 1 tbsp Coriander
  • 1 tbps Paprika
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 12-16 oz plain yogurt or plain greek yogurt

Set oven to High Broil to begin heating. Skin chicken quarters and set aside. Mix together all spices and distribute evenly over both sides of chicken. Apply yogurt generously to both sides of chicken. Place chicken on broiler pan and place in oven about 12 inches from the top (we used the 2nd rack spot). Broil for 7-9 minutes per side until internal temp reaches 165F.

This chicken works wonderfully on it’s own but it also works great with this simple Tikka Masala sauce which we’ll also show you how to make!

For the sauce you’ll need to chop 1/2 a large onion, 1/4 cup of cilantro and mince 1Tbsp of ginger and 4 cloves of garlic.

Melt 2 tbsp butter over Medium-High in a large skillet, when melted mix in the onion until it starts to brown. Mix in the garlic and ginger and cook for a few minutes. Add 2 tbsp garam marsala, 1 tbsp paprika and 1 tbsp cumin. Mix together and stir constantly for 2-3 minutes. Next, pour in a 28oz can of petite diced tomatoes allow to boil and scrape the bottom of the pan as you mix (deglaze). Reduce heat to Medium add 2 tsp of sugar and allow to simmer 3-5 minutes. Add in 1 1/2 cups of heavy cream and continue simmering for another 3-5 minutes or until heated through.

Mix in all but a tsp of the cilantro and serve over chicken, sprinkling the remaining cilantro over the top.

We serve over tumeric rice (2-3 tsp of tumeric added to basmatic rice and water before cooking). You can also chop up the chicken and mix with the sauce. The recipe is easy to modify to whatever cut of chicken you have on hand!

Broiled Chicken Tikka Masala

  • 4 Easy Broiled Yogurt Chicken quarters
  • 1/2 a large onion (or 1 1/4 cup chopped)
  • 1 tbsp finely minced ginger
  • 4 cloves finely minced garlic
  • 1/4 cup chopped cilantro
  • 2 tbsp butter
  • 2 tbsp garam marsala
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 28oz can petite diced tomatoes
  • 1 1/2 c heavy whipping cream

Melt 2 tbsp butter over Medium-High in a large skillet, when melted mix in the onion until it starts to brown. Mix in garlic, ginger and 2 tbsp garam marsala, 1 tbsp paprika and 1 tbsp cumin. Once combined pour in a 28oz can of petite diced tomatoes allow to boil and scrape the bottom of the pan as you mix (de-glaze). Reduce heat to Medium add 2 tsp of sugar and allow to simmer 3-5 minutes while stirring. Add in 1 1/2 cups of heavy cream and continue simmering for another 3-5 minutes or until heated through (stirring occasionaly). Mix in all but a tsp of the cilantro and serve over chicken, sprinkling the remaining cilantro over the top.
